The Fèvre family can trace their Chablis winemaking roots back to 1745.

In 1923, Gilles Fèvre’s great-grandfather became one of the founding members of the cooperative: La Chablisienne. The family committed whole-heartedly to the cooperative and delivered their entire harvest for vinification from 1923 until 2003.  Gilles’ grandfather and father both held the position of president, while his wife, Nathalie, was chief oenologist for twelve years.

However, in 2003, this dynamic couple seized the opportunity to take back some of their vineyards and make wines under their own label – for the first time in five generations of winemaking history! Their wines have achieved critical acclaim ever since.  In 2016, Nathalie and Gilles' daughter Julie joined the family estate.

The Fèvres limit their intervention in the vineyards to a strict minimum, in order to let the authenticity of the terroir shine through.

Parcels are treated individually and treatments are used sparingly and intelligently. Chemical insecticides have been replaced by natural pest control. In 2015, they obtained HVE certification.

Their ultra-efficient winery allows them vinify each parcel individually. Wines are fermented with selected yeast, in small, temperature-controlled, stainless steel tanks (20-50 hl) before being matured on fine lees in a mix of vats and French oak barrels.
